We Only Had One Day in Cappadocia. Here's How We Made It Count

With just six days to explore Turkey, we dedicated one full day to Cappadocia — and it became the highlight of our journey. Having done an extensive research on this magical city, we curated a one-day itinerary that brought together the region’s most iconic sights and unforgettable experiences.

Travel from Istanbul to Cappadocia

Several daily flights operate from both Istanbul Airport (IST) and Sabiha Gokcen International Airport (SAW) to two nearby airports in Cappadocia — Nevsehir Kapadokya airport (NAV) and Kayseri Erkilet airport (ASR). The flight time is approximately 1h15m.

Most hotels in Cappadocia offer airport shuttle services at an additional cost. We paid 10 euros per person for a shared transfer arranged by our hotel. The drive from Kayseri (ASR) to Goreme (the main hub of Cappadocia) takes about an hour.

Staying in a Cave Hotel (A Must-Do!)

A trip to Cappadocia is not complete without experiencing a stay at one of its cave hotels. These unique structures are carved into rock formations and their sprawling terraces offer magnificent views of the hot-air balloons against the golden hues of dawn.

We chose to stay at Antique Terrace Cave Suites. The spacious, airy cave rooms housed with comfortable bedding and a private balcony with stunning views far exceeded our expectations.

The icing on the cake was the mesmerizing sight of a colorful array of hot-air balloons magically appearing in the sky and drifting gracefully over fairy chimneys at the crack of dawn.

Breakfast, included with the stay, had limited options but was satisfying. However, savoring the breakfast on a terrace overlooking Cappadocia’s surreal landscape made for some precious memories.

Exploring Cappadocia in one day

With limited time, the best way to explore Cappadocia is through a guided tour and the two most popular options are the Green Tour and Red Tour. The Green Tour, covering Southern Cappadocia, is a classic combo of nature and adventure and includes:

  • Ihlara Valley hike (approximately 4kms)
  • Ancient rock-cut churches
  • Underground cities (Derinkuyu or Kaymakli)
  • Pigeon Valley

The Red Tour touches upon the highlights and history of northern Cappadocia and includes:

  • Göreme Open Air Museum
  • Uçhisar Castle
  • Avanos Town

Our Experience: The Green Tour

The Green Tour begin at 9AM with hotel pickup. The first stop in the tour after a scenic one-hour drive from Göreme town was the ancient rock-cut churches. This was followed by a hike through the breathtaking Ihlara Valley. This was definitely the highlight of the day as we walked alongside a peaceful river flowing through the valley, surrounded by towering cliffs and lush greenery. We felt the presence of the ancient dwellers who had set feet upon the valley eons ago.

The lunch served after the hike was sumptuous and filling, with the travelers getting to choose from different options like vegetarian, chicken, beef, and fish.

Post-lunch, the tour continued with a visit to the fascinating Kayamakli Underground city. This is one of Cappadocia’s most intriguing historical sites. Walking through its narrow tunnels and multi-level chambers gave us a glimpse into ancient civilizations and how they lived underground for protection.

Next, we stopped at an Onyx Jewellery factory, where we were given an insight into how raw stones are transformed into intricate pieces of jewelry. The final stop of the day was Pigeon Valley, offering stunning panoramic views of Cappadocia’s iconic landscape dotted with fairy chimneys and ancient pigeon houses carved into rocks.

A special appreciation goes to our tour guide, Ms. Arca. Being a local, her deep knowledge of the region’s history and her warm, engaging nature truly elevated our experience.

What is the best time to visit Cappadocia? Spring (April–June) and autumn (September–November) are the sweet spots — mild weather, fewer crowds, and good balloon-flying conditions. Summer is hot and busy; winter can be cold but dramatically beautiful with snow-dusted fairy chimneys.

Do I need to book the Green Tour in advance? You can book on arrival through your hotel or local operators, but booking a day ahead is wise in peak season. Your hotel will almost always be able to arrange it.

Wrapping up the day

The Green Tour ended at approximately 6:30pm, and we were dropped off to our hotel. Our airport pickup arrived soon thereafter, enabling us to catch the 10pm return flight to Istanbul.

Looking back, the one-day trip to Cappadocia turned out to be a very comfortable ride. A ride on the hot-air balloon ride would definitely have been an icing on the cake. However, this would have required an early pickup, as early as 3AM. Since the whole purpose of our trip was a relaxed vacation and given our tight schedule, we decided to skip it this time.

That said, watching the balloons float across the sky from our hotel terrace was magical in itself — and the ride remains firmly on our bucket list.

Even with just one day, Cappadocia left us completely enchanted. From surreal landscapes and ancient underground cities to peaceful valleys and dreamy balloon-filled skies — it truly feels like stepping into another world.

Practical Tips:

A few practical tips before you go:

  • Wear comfortable shoes. The Ihlara Valley hike is about 4km on uneven, rocky terrain. Sneakers or light hiking shoes are a must.
  • Dress in layers. Cappadocia mornings are cool, especially if you're on a hotel terrace watching the balloons at dawn. Afternoons warm up quickly.
  • Carry cash. Some entry points and small shops are cash-only. Turkish Lira is preferred, though euros are widely accepted in tourist areas.
  • Book your cave hotel early. The best-value cave hotels fill up fast, especially on weekends and in peak season.
  • Don't skip the balloon view from your terrace. Even if you don't ride one, waking up at dawn to watch dozens of balloons drift over the fairy chimneys from your hotel terrace is absolutely worth the early alarm.
